The Ethiopian Sudan Rume variety shows peculiarities through the Brazilian terroir. Sudan Rume is a rare branch of the Bourbon coffee family and comes from the border area between Ethiopia and Sudan, in the Boma Nature Reserve. It was first catalogued in the 1940s, and is a delicate variety with a very small harvest. The work is worth it, because the variety produces juicy, red fruits with floral notes. Due to the natural processing, you can taste something extraordinary in the cup. Processing is a main topic at Santuàrio Sul, and detail-oriented fermentation creates first-class natural coffees. This Sudan rume is no exception.
The Fazenda Santuàrio Sul is located in Carmo de Minas, where more than 30 exotic coffees are grown and processed. In recent years, the farm has achieved a brilliant track record with various coffees at the Cup of Excellence.
The Fazenda Santuàrio Sul (the sanctuary) is a project founded with the aim of pioneering new trends. The coffees grown here reflect the tenacity of the farmer Luiz Paulo and his partners.
Today, in addition to traditional Brazilian varieties such as Yellow Bourbon, there are more than 30 exotic coffee varieties on the farm, differentiated cultivation practices such as shady fields and innovative processes that achieve new tastes.
The Fazenda Santuàrio Sul is located next to one of the most traditional plantations in Carmo de Minas, Irmãs Pereira, where the coffee is processed. The varieties planted are closely monitored with great care in order to achieve the best results from the climatic conditions of the region. In addition, Luiz Paulo himself insists on harvesting the first tests of each of these coffees. For the next few years, Luiz Paulo has no doubt about it, "the goal is to lead the avant-garde of the market and offer ever better qualities!"
