-PICO LOT- Expect a delicate and complex cup with juicy citrus acidity reminiscent of candied lemon, and floral characters of orange blossom and honeysuckle. It's a treat!
Our producer Jose Ignacio Jijón or Pepe, has been farming for over a decade planting varieties like typica, mejorado, sidra and gesha. What sets him apart from the other farmers is his adventurous personality to be experimental with processing and intuition to listen to the living embryo of the coffee cherries by drying them slowly and gently to put them in a dormant state inside ‘marquesinas’ or polytunnels until humidity reaches 12%.
The farm is located 50 km north-west of Quito on the Andean slopes that form the Intag valley and is surrounded by high mountains, dense biodiversity and the strong river Intag. The partial shade helps keep plants cool during dry season and allows air flow during wet season.
