Coffee fruit flesh were partially removed during the yellow honey process. The seeds covered in their mucilage become sticky, almost like fermented fruits. They have to be monitored and turned carefully to avoid mold. As soon as they are in their ideal state, the skins are then completely removed and the beans are dried.
You can expect a medium body cup with nutty flavours of cashews, citrus acidity and lingering sweetness reminiscent of figs. Just yum! Ok, I'm going for a refill!
