Montero family has been producing coffee for three generations. It started with Grandpa Eli, followed by his son Carlos and now his grandson Jakob. This family is admired by the coffee community in the region for being the visionaries and the place for other farmers to seek advice.
The coffee cherries were moved constantly in order to prevent too much fermentation during the first few days at the mill. After a week, the cherries were raked every few hours for about 22 days for the coffee to achieve the targeted moisture content. After drying, the coffees take about a month to rest in the warehouse for flavour to fully develop.
