Finca Las Lajas was the first organic farm in the country. They were also pioneer of naturally processed coffee when they had to find an alternative solution to process their coffees following an earthquake in 2008 that limited their access to water and electricity. They have also invested in a micro mill and dry pulper in order to reduce their water consumption. Waste is recycled in their own fermentation process.
