Yirgacheffe is recognized as one of coffee’s ‘birth regions.’ This region celebrates traditional methods of farming, meaning they farm a variety of crops throughout the year as a food source as well as to maintain soil health with minimal interventions (if any). Majority of the work in the farm is done manually too- including selecting the ripest cherries and processing.
Cherry is first sorted and pulped upon arrival at the station. They are then fermented, washed and dried for about 10 to 14 days on raised beds.
