75% of the population in Huehuetenango are made up of the indigenous people of Maya or MAM. For thousands of years, they have been farming using their traditional methods that include farming a variety of crops, using organic waste products from their sheeps as fertilisers, turning the land and allowing rest period for the soil to recover.
The hot air from the west and cool air from the north helps create a microclimate that enables coffee farming at high altitude without frost. The result is this spectacular coffee with lively character.
