About 1600 member farmers deliver their coffee cherries to Gakuyuini factory. Thanks to the nutritious red volcanic soil and its high altitude, the coffee from this area has a highly complex and fruity character.
This lot went through meticulous hand sorting and grading right after harvest. After that, they were put in pulping machine to remove the skin and pulp. They were once again graded into 3 groups, only the first two grades make it through the fermentation process, for about 16 to 24 hours followed by washing the impurities and graded once again to really separate the lots based on quality. Finally, the coffees were dried on African beds for 21 days and protected with plastic covers when it's the hottest during the day and coldest at night.
