The coffee plants were grown under supervision of the most famous farmers in Ethiopia. Shantawene is named after the village of the farmers. To encourage quality focused farming, Daye Bensa organises competitions and rewards the top 3 farmers who produce the best coffees. The goal is also to encourage more female farmers to participate in coffee farming as well as working with the local university with research for improvements.
Only the ripest cherries were handpicked and sorted strictly. They were then dried gently on raised bed in their own flesh to optimise natural sweetness of the coffee.
