Expect a smooth cup with notes of cocoa nibs, dates and passionfruit. Super long and pleasant aftertaste reminiscent of cherry liqueur. It a fun coffee all round!
Hacienda el Jardín is made up of 17 small farms that started with traditional agricultural methods and progressed into better farming practices like using organic matters as fertilisers and planting different coffee varieties.
Coffee cherries were hand harvested and graded. The cherries went through a 48h anaerobic fermentation in metal tanks with diluted yeast. They were then dried in the greenhouse with 3 level canopies for 4 days and put into a mechanical silo to be aired for 3 days and rested for 2 months in Grainpro bags.
