Expect a funky cup with notes of dark chocolate, plums and red wine. Note: No red wine was added in this bag of coffee so it is safe for your morning consumption :)
Thanks to its unique terrior packed with nutrients from the volcanic soil, the coffee from this region is incomparable. Coffee cherries were harvested by hand due to the steep slopes that are unreachable with machines.
The ripest cherries were picked and transported to the processing station to be pulped and processed. Some flesh of the cherries were kept during the drying process to increase sugar level for a duration of 10-14 days, rested in wooden vats for 20 days and eventually cleaned of their parchments to be ready for packing.
